Corn Fritters


The recipe:


I cook all "hodge podge", so these are rough estimates.  You might have to play with it a bit.

Cut the kernels from 4 ears of corn.  Saute those kernals with 1/2 a chopped onion, a little salt, pepper and some Cajun spice.

In a bowl, mix 1 cup of flour, 2/3 cup of corn meal, 1 tsp of baking soda, 1/2 tsp of salt, 1 tsp of sugar and a shake of red pepper.  Make a well and add 1 cup of milk and 2 beaten eggs.  Stir together.  (It should resemble pancake batter.)  Stir in the corn and onions.

Fry (exactly like you would fry pancakes) on a griddle lightly sprayed with oil.
